I don't know about ya'll but I am always on the look out for a new recipe to try. I try to find ones that are healthy (because trying to get skinny is my nemesis) and easy! I came across this
recipe (Joy Filled Eats) on Pinterest (duh, right?!). It was super easy to throw together. In fact, we had it for dinner Monday night, but I made it and just put in fridge before I went to sleep the night before. I got a little burst of energy right before bed so said why not. I knew when I got home Monday I would not feel like cooking. That's my main problem after work. Also, my kids favorite thing to tell me "I don't like that"! About EVERYTHING!! So it is just easier on nights when Nick is at firehouse to let them it cereal and fruit or grilled cheese and yogurt. Nick and I really liked this casserole....and the kids....."I DON"T LIKE THAT". Mere ate a few bites. Max wouldn't even touch it. He was perfectly content with eating his yogurt and nothing else.
Ingredients:
1.5 1b. cooked chicken (cubed)
1-1.5 lb. frozen broccoli (thawed/drained)
1/2 T. garlic powder
1 T. minced onion
1/2 T. dill
1 T. parsley
1/2 t. salt
1/2 t. peppers
1/4 C + 2 T. bacon crumbles
1 8oz. pkg. cream cheese, softened
4 oz. sour cream
4 oz. mayo
8 oz. shredded chedder
What are your go to healthy and easy recipes? Any kid friendly?? Maybe one day I will hear "I like that"!
